HPP technology draws its inspiration from the Mariana Trench, where water pressure reaches 110MPa at depths of nearly 11,000 meters, creating an environment in which very few microorganisms can survive. Inspired by this natural phenomenon, scientists developed a non-thermal pasteurization process that subjects food to pressures of up to 600MPa at low temperatures. Under these conditions, the cell membranes of pathogenic and spoilage microorganisms are disrupted, while the food’s natural nutrients, fresh flavor, texture, and appearance are preserved. Unlike conventional thermal processing, HPP eliminates discoloration, flavor deterioration, and nutrient loss caused by heat.
Today, HPP has become a proven technology for premium cold-pressed juices, ready-to-eat meat products, and raw seafood, significantly extending refrigerated shelf life while maintaining fresh taste and quality.
